Cooking the ‘absolute classics’ at the Heimatbühne restaurant is Martin Siebere’s pet project. In the Trofana Royal’s second À-la-carte restaurant, he revives the lost art of traditional cooking with a (fanatical) reliance on regional ingredients. From Paznaun Highlander cattle to sheep, wild calf from the Fimba valley, Diasbach trout and multi-award-winning Alpine cheeses, each main ingredient is showcased and prepared with love - just like your grandmother’s best Sunday recipe. Food critics and discerning guests agree: grandma's haute cuisine is a feast for the palate and the eye. Founded in 2016, the Heimatbühne restaurant earned 2 toques in 2017 and garnered its third in 2019! It is an excellent acknowledgement of the work of the kitchen and service teams and an unconditional recommendation to discover the holiday region with knife and fork.

Regional ingredients

Sheep and beef, fish, bread, milk, herbs, berries, mushrooms, honey and more provide the cooks in Paznaun with a vast array of fresh ingredients that go into creating honest local cuisine. From the opulent breakfast to the last course in the evening, savour every bite. And just when you think you can’t possibly eat any more: award-winning Paznaun Almkäse cheese rounds off the evening with a tangy twist.

Our supplier list contains the names of friends and acquaintances, not telephone numbers. For many years Martin Sieberer has maintained close relationships with Paznaun’s farmers, cattle breeders and Alpine dairymen, all of whom share his high-quality standards. In doing so, he supports local producers and establishes them as reliable partners in tourism.

 

Sustainable structures

Martin Sieberer's enthusiasm for regional products was one of the key reasons that Ischgl developed into an international gourmet hotspot. His passion also gave rise to the ‘Paznaun Gourmet Region,’ which unites Alpine agriculture, gastronomy, the hotel industry and consumers in partnership while preserving our valuable culinary heritage.
