The Paznauner Stube has been a culinary highlight in Ischgl since 1997. Chef de Cuisine Martin Sieberer delights with hearty Tyrolean cuisine and international specialities – acclaimed by Falstaff, Gault Millau, and others. Please note that your reservation is only binding once we have received your credit card details for security purposes. Should your plans change, we will allow you to cancel free of charge until 18:00 the evening before. In case of later cancellation or no-show, we reserve the right to deduct € 100.00 per person.

Cooking the ‘absolute classics’ at the Heimatbühne restaurant is Martin Sieberer’s passion project. In the Trofana Royal’s second à la carte restaurant, he brings the lost art of traditional cooking back to life, with a steadfast focus on regional ingredients. From Paznaun Highlander cattle and sheep to wild veal from the Fimba Valley, Diasbach trout, and award-winning Alpine cheeses, every main ingredient is celebrated and lovingly prepared—just like your grandmother’s finest Sunday recipes. Food critics and discerning guests agree: Grandma’s haute cuisine is a true feast for both the palate and the eyes.
