The 12th Culinary Way of St. James promises relaxed hiking and enjoyable feasting along five pleasure routes at over 2,000 metres elevation. To this end, five top chefs from Paznaun will each take over a mountain hut for an entire summer and create refined, down-to-earth dishes from regional ingredients.
This year, you can taste Paznauner Bergkäsenocken with warm cabbage salad, smoked ham and chanterelle dumplings, Alpine Bolognese of game with potato gnocchi, roulade of Paznauner highland beef with potatoes, smoked onion [R1] as well as beef goulash with porcini-mushroom and mountain-cheese dumplings, wild herb salad and roasted onion.
Keen on a biking and gourmet food instead? All huts along the Culinary Way of St. James are easily accessible by ebike or mountain bike. Bikes can be rented from us at the Trofana Royal.
